on saturday i went to see LMFAO at the Barrowlands in town. and it was
i loved them before this and now after this i LOVE LOVE LOVE them. i wanna go see them again. it was without a doubt the best gig i’ve ever been to, it was so mad. i honestly don’t think i had the best of views but i could see him when people weren’t mega bouncing about in front of me. it was so mad, everyone was just jumping about like mad. i completely fancy Red Foo now! ♥
i’m trying hard to not turn my blog into a baking blog, but lately all i feel like i’ve been doing is baking. the rainbow cakes proved a thumbs up with the family, and i took some in to work and the girls LOVED them!
March has been a bit of a quiet month, with not much to really share apart from this! i did start to make cupcakes on friday night until i got tempted by company and alcohol. i wanted to make chocolate mint icing until this too. it’s on my baking agenda – but it’s bad choice as i started a Military Style Holiday Body Regime! oops…
anyway lemon drizzle!
120g butter (i recommend Stork butter for cakes…it’s the best!)
120g caster sugar
finely grated lemon zest – 1 lemon
120g self raising flour
juice 1 lemon
85g icing sugar
1. heat oven to 180C/fan 160C/gas 4. combine sugar and butter until pale and creamy. add eggs one at a time, them add the flour in slowly, mixing at intervals. grease your choice of loaf tin/cake tin (here i used a silicone loaf mould), and pour in mixture, leveling the top.
2. bake for 45-50 minutes until you can pull a clean knife or skewer out of the middle. while te cake is cooling, mix lemon juice and icing sugar together until all is combined. poke a fork into the cake several times and then drizzle the icing mix on top.
i didn’t take any pictures of this one, but it wasn’t that successful. unfortunately i made too much mix (as the recipe i read called for double of what i’ve said) and it was too much for my little mould. it was completely burnt at the top and not ready in the middle. so i had to shave the top off and it didn’t have that nice crisp topping. i also made it FAR to lemony!
i feel like baking right now. i always bake whenever i feel something really strongly, if that makes sense? i have an interview tomorrow, so i am REALLY nervous and i find that baking gives you time to think. now i’m googling recipes…Madeira cake. is that bad for you?
i don’t see me doing so well on this diet anymore…
